Another vote for minimal smoke. In a stick burner, mild fruit wood. In a BGE, either just charcoal or add some wood chips of fruit wood, pecan or even a little bit of oak. They key is a little bit of any wood.
I love smoked birds, if the smoke flavor is mild. Error on the side of less smoke. That is part of the reason I cook birds hotter and faster instead of low and slow.Victoria, TX - 1 Large BGE and a 36" Blackstone -
What temp do you guys cook at and do you use a roast pan covered at all ?

if your using smoke, you will need to cover it eventually..I use a cheese cloth once I get the color I am looking for.Have:
XLBGE / Stumps Baby XL / Couple of Stokers (Gen 1 and Gen 3) / Blackstone 36 / Maxey 3x5 water pan hog cooker
