Finally cold enought to smoke some cheese...

Since moving to TX, I smoke cheese in November, in time for Thanksgiving, Christmas and the rest of the year...I use the A-Maze-N-Pellet-Smoker: http://www.amazenproducts.com/Default.asp Good Stuff! First round, Coastal rugged mature English cheddar from Costco.. Indirect, added some ice on a drip pan, just to make sure. 2 -3 hours.. This is the start.
