Question about Dutch Oven

I recently got a 9 QT Lodge cast iron Dutch oven. Question I have is the egg setup for cooking.  When cooking does it need to be direct or indirect?  Grid height or raised?  Thanks !!

Typically I use mine indirect at the gasket line but it really depends on what youre cooking in it.

Indirect. If you are browning meat or sauteing veggies first, do that direct, then add the plate setter for the rest.

I have used ours direct over a fire, when camping. Stews, pot roast and chili. I have used it indirect as well. It is very versatile, and it is only limited by your imagination. You are a great cook, just remember to use a little oil to minimize food sticking. We love ours. We actually baked biscuits in it once. You got this.

Use it indirect like an oven dish.  Chili, beans etc...

  • @YukonRon    Thanks Ron.  This will be something new for me on the egg.

@bgebrent      Thanks Brent. I will be trying some chile and stew very soon.

Makes some great beef stew. Indirect at felt line and top off....allows for a nice touch of smoke (Rockwood) that is not overpowering. Stir occasionally and taste. You can always cover when smoke profile is to your liking. Lower heat if cooking with the lid on. Enjoy and hope to see you at Butt Blast.

@northGAcock     Hey thanks for info on the lid. I was wondering how to handle lid or no lid.  I am looking forward to Butt Blast again. Enjoyed meeting you and all the other great folks.

Keep the lid off for great smoke flavor.

I would rather light a candle than curse your darkness.

  • @northGAcock I plan to make @EggObsessed and @NoJokeSmoke inspired Smoke Brisket Chili using leftover brisket.  This will be my first time using the Lodge 7Q CI DO in my LBGE. Thanks for the tip on leaving the top off to get the right smoke profile.

either way but keep in mind the temps are differnt, direct it simmers below 300 dome, indirect its above, compensate for how its simmering

If I am browning meat and sautéing veggies I will sit it on the grid at OEM height direct around 300-325 then once I add the liquid I will put the PS in and close the vents a bit. It will begin to simmer in 20-25mins.
