Deer, jalapeño, and cheddar summer sausage

It was my first attempt and summer sausage. 6  lbs of deer 3 lbs pork butt in 3 casings. These turned out great because I didn't over do the seasoning like so many processors do. This is the best summer sausage I have had. Sorry no pics of the grinding process. Hard to take pictures cover in meat. I did mess up and put the hi temp cheese in to early and it got ground up. Did a hour in the oven then 3 on the egg until 155.
