    @SmokeyPitt, thank you brother!  Prime packer came from Wilkes as Fergusons didn't have any as I now recall.  The marbled rye came from Publix.  We were most pleased with the Reuben's!  I miss George.

    im getting a rueben today for lunch. you did it right, the point is the way to go for pastrami and boil the flat, boiled flats make great sandwiches as well =)

    brent-   looks awesome.   did you finish with steam.   I just bought a pre-packaged corned beef today.  I will soak overnight but was planning on just cooking on the egg.

    Thanks.  Assuming yours is pickled and uncooked, smoking it will technically produce pastrami.  Corned beef is pickled/cured brisket (typically the flat) that is simmered several hours in water with pickling spices.  That is what I did.  Either way you should get some tasty eats.

    I would smoke then steam if you want the more authentic texture of deli pastrami.  At least with the flat.

    Thank you, I love it.  I bought the table at Ferguson's Meat Market in Cumming, GA.  A local craftsman builds tables and Ferguson's helps him showcase them.  They are a BGE dealer.
