Skirt Steak with Chimichurri

Duke absolutely loves flat iron steak, but unfortunately, the store didn't have any yesterday. Nor did they have flank steak. So my third choice was some skirt steak. Was on sale 50% so BONUS!! Tossed it on the Egg along with some mesquite because to me, skirt steak just needs mesquite. That's how you grow up in South Texas.

Threw on a bit of asparagus to go with it.

And served it up with some fingerling potatoes that I roasted in the oven <gasp> I would have like to do them on the MINI, but since the outdoor cooking area is still under construction, there is no where to put it that a kid or dog might knock it over. The box in the kitchen still does a good enough job.

A little overdone for my taste, but I'm was told not to feed the kid rare to medium rare steak. Not bad for a quick meal, though. Duke ate it up, well except for the asparagus. He wasn't into that too much.

  • Great looking plate of food, @Griffin.  We love chimichurri at our house.  We often make it with a mix of cilantro and Italian parsley.  Have you tried hangar steak for "fajita" meat?  It has great flavor and a very nice texture.  We got ours at Central Market.

    I'm sure we've used hanger steak before, but our store doesn't carry it and we're now at least a good 25 minutes to the nearest Central Market so we don't get there as often as we used to. I'll look for it next time we're there.

    and trust me , med rare steak is fine for your little guy.

    Fine looking plate, I've never heard of not serving medium cooked beef to the kids, but better safe than sorry. I could eat that meal every day, love all three items.
