My first chuckie!

The person totally responsible for this cook is @WeberWho. I saw his post about smoking a chuckie, and it rocked my world. Today was the day. I got a 4 pound chuck roast yesterday cooked it today.
I followed the recipe that @Weberwho posted. It can be found here http://www.thewolfepit.com/2009/10/pepper-stout-beef.html?m=1
I changed the recipe a little bit. I went with a green, red, and yellow pepper. I added the large red onion, garlic and jalapeno's. My wife was nervous that I would ruin it with heat so I only used two jalapenos, and I removed the seeds and veins. I also added mushrooms. It took 5 hours for the roast to get to 165! I let it cook with veggies for 3 hours and pulled it. I then let it rode for almost another hour.
It frigging rocked. We loved it! It is better than I expected. It took almost 10 hours for this cook, but it was well worth it.

Pulled beef beats the pork cousin every time. Just like the rib deal. Go forth and enjoy but you gotta get that chuckie up to around 210-215*F before it will behave.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer!
