My first chuckie!

The person totally responsible for this cook is @WeberWho.  I saw his post about smoking a chuckie, and it rocked my world. Today was the day. I got a 4 pound chuck roast yesterday cooked it today. 

I followed the recipe that @Weberwho posted. It can be found here http://www.thewolfepit.com/2009/10/pepper-stout-beef.html?m=1

I changed the recipe a little bit. I went with a green, red, and yellow pepper. I added the large red onion, garlic and jalapeno's. My wife was nervous that I would ruin it with heat so I only used two jalapenos, and I removed the seeds and veins. I also added mushrooms. It took 5 hours for the roast to get to 165!  I let it cook with veggies for 3 hours and pulled it. I then let it rode for almost another hour. 

It frigging rocked. We loved it! It is better than I expected. It took almost 10 hours for this cook, but it was well worth it.

    Great cook!  Still haven't done a chuckie either. Still on the list. Yours may push me over the edge.

    I am sure I am partial, but that was the best damn roast I have ever eaten in my life! In the rotation for sure!

    Pulled beef beats the pork cousin every time.  Just like the rib deal.  Go forth and enjoy but you gotta get that chuckie up to around 210-215*F before it will behave.  
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Yes!!!!! Awesome! I'm glad it turned out. It looks great. The wife liked it? How did the mushrooms work out for you guys? Just wait until you sample leftovers. 5 days straight of leftovers and I still wasn't sick of it

    Nah. I've done pulled beef a few times. Nothing compares to the umami flavor of pork.

    My wife thought it was ok, but she is picky. Doesn't like onions or mushrooms. The mushrooms was a great addition for us. 3 out 4 of us loved it!

    Looks great John. I'm actually quite surprised this is your first Chuckie. 
    I am not very adventurous at all. That is why you don't see me posting many cooks. I mostly cook steak, chicken, sausage, and burgers. The occasional port butt and venison and that is about it.

    I gotta agree with @lousubcap on pulled beef being better than pork.  Hands down beef is a favorite here.

    Looks tremendous!  Nothing like trying a new recipe and killing it, nice work. Chuck roast is an under appreciated cut IMHO.
