Testing my new toy > Bacon Turkey Spiedini

Thanks to Lakeshore Living (Niagara Eggfest sponsor), I got a new toy - Italian made high quality spiedini maker!
Deboned a 11.5 lb turkey, salted lightly and filled the cube with interspersed layers of bacon, with half a breast leftover.
It was challenging to skewer and release because I failed to plan and only had heavy duty skewers on hand, duh!
Had to shorten the oversized skewers with a pair of cutter pliers Freezing most of the 10x10 mini kebabs!
It was late to fire up an egg for first sample cook ... just added garlic powder and thyme, then quick sear on CI pan, yum! Should be a fun cook for parties and eggfests!
Glad I didn't buy a cheapo version online. This thing is made with heavy gauge SS cage + thick ceramic top and bottom.

I'm guessing once you get all the skewers in you take a long sharp knife and run it through the slots in the sides

100 is more work but I wouldn't have to do it again for a while ...

Canugghead, how did the bacon turn out? It seems that pressed in between the turkey it wouldn't crisp up? Just curious as I'm seriously considering purchasing one after seeing yours. Thanks for any input.

@Moleman you're right about bacon not fully crisp, also with just 4 or 5 thin separated squares per skewer its taste is not dominant. Purpose of bacon was my attempt to keep the turkey moist or less bland than just turkey. For more porkiness you can wrap it in bacon or make pork belly skewerscanuckland

More fun with the toy, made Simon and Garfunkel turkey skewers for canuck Thanksgiving. Skipped alternate slots on one side to double up, much easier to cook. Cooked on centre cut lump and served with siraccha ketchup.
The process went significantly smoother because a day earlier I made sure all skewers had a loose fit, had to shave down 18 sticks out of the 100 pack.
