    even if it didn't the I thought it made a difference so I used salt again in last night's over night lo & slo butt cook and liked the results and am using it again today during todays turbo butt!

    A 250 oven doesn't get over 250? You measure at different heights in the grill and the lower you go the hotter it gets. And the fire will be over 250, it's just a small fire that has to heat a relatively large area.
