Brisket, fire out for a few hours

Hey everyone,

Cooking a brisket this morning and just woke up to find the fire was out. 

Instarted it it around 11pm at 225f. It was fine around 12am so I went to bed. I woke up about four hours later to see the temp at 120f.

I was able to get the temp back up to 250f pretty quickly by opening the vents for a few minutes. Internal temps were around 130-140f. 

Should I plan on tossing it still?

  • Your fire didn't actually go out - it was just on its way, since you were able to get the temps back up by opening the vents.  You should be fine - no need to throw anything out if it only got down to 120.  Enjoy your brisket and the day!
