Deez Nuts Pecan Chicken Ballotine

@CTMike I cooked this last week for a family diner.

Debonned chicken with bread stuffing, maple sausage, pecans and rubbed with Meat Church Deez Nuts BBQ rub.  Side of rice and beets feta salad.

    @paqman -  Great cook as always with the chix ballotine.   You have that technique down and the outcomes are definitely food magazine quality.  Most eggcellent.

    BTW - what's up with the beets and feta salads? It must be the Canadian kale, see it everywhere including a pub I stopped into last week. Easy and very good.

    I used that video as a guide when I did my first ballotine, but it took me significantly longer to do.

    @GrateEggspectations The picture against the yellow background makes it look darker than it really was.  In real life, it was dark mahogany red/brown.  The pecan rub is really interesting.  It was way different than what I usually use.

    Holy $hitballs!  Excellent cook right here!!!  Was just about to do a Ballotine but, opted for spatch and shredded for tacos. Love the stuffing you used. Awesome work my friend.

    @Skiddymarker I've never seen it around here.  I usually mix beets with goat cheese.  SWMBO wanted me to spiralize the beets and some carrots with a Chinese five spices dressing but I ran out of time so I looked in the fridge and dealt with what I had on hands.  A long time ago, I worked in a fancy hotel restaurant and they served an appetizer of feta cheese marinated in beets juice (but no beets); it may have influenced me.  The final touch in the salad was fresh thyme from my garden, it was really good.

  • @paqman  - DIL brought a salad last year, beets and cilantro with feta. Saw a recipe on Canadian Living for roasted beets that gave me the idea to use the egg. Even the grand kids like to eat what they call Zombie brain salad.

    That looks like a home run! I'm certain it would take me longer to debone a bird like that, than it would to finish the rest of the cook :)
