Jumping on the peach bandwagon....

Saw some recent peach pie and crumble posts that had my mouth watering. As luck would have it, I had a basket of peaches that were right at their peak. Made my own pie crust (BGE recipe) and did a peach vanilla bourbon filling. Turned out fantastically in a CI pan on the Mini Max. Will make again.

I have a lap full of peach/blackberry pie. I asked my wife to pick up some more to do this tart I saw but she said Kroger was out of control on prices. Guess I will have to stop by the Farmers Market.

@tgs2401: Sorry, I can't tell you exact measurements as I largely winged it. However, any peach pie filling recipe will do. An approximation of the following is what I used: 8 small peaches, 2 tbs bourbon, 1/3 cup brown sugar, a few dashes of vanilla, some flour or corn starch (to thicken the filling). Tasted fantastic!
