Jerk Chicken

Inspired by recent posts by @SGH and others, I decided to try Jerk Chicken again. This time I ordered in pimento wood and leaves; the smell as it was cooking was amazing. Cooked 3.5 hours indirect at 225 dome until 170 IT.

Served with with side of Jamaican "rice and peas" and Walkerwood Jerk sauce.

Tasty and a fun cook...but still a far cry from what I've had in Jamaica.

Next time, try 275 indirect for 2- 2 1/2 hours. The pimento adds a great color but your picture is more of a dark brown than a dark almond looking color.

I recall reading on the website or with the directions that came with the pimento that you don't want the chips to burn that it puts off an acrid odor. So, not sure you want toss any in the lump.
