    They look good, but does it seem weird to anybody else that the recipe uses flour tortillas instead of corn? I've never had enchiladas with flour tortillas, just seems...odd I guess.

    We have a fantastic recipe, but have been threatened with all sorts of not nice things should I ever divulge it. Typically I like the GREEN with leftover beer-can chicken and RED with beef. We have some ribeye and/or fillet steak ends from our butcher that makes killer enchiladas.

    That sauce recipe looks very close to my own; if you use lard instead of vegetable oil, it will be mine!  (I've also used bacon drippings, delicious but not traditional).  
    I just read the recipe and though "pig butter instead of oil, thighs instead of breasts".  Great minds...

    @NDG, I don't know if this is a good green recipe or not, but it sure looks good and I intend to try it. From Skip Bayless' brother Rick (who has a MUCH better rep as a chef than Skip has as a sportscaster. =)) If you try it before I do, please post the results!

    @Carolina Q thanks for posting video . . just watched . . no oven technique is new to me and sounds like it is more authentic (compared to cheese covered melted tex mex)  I will try it !

    try making some enchiladas using some Bueno red chile i have seen it frozen in many walmarts around the country

    sometimes i will make some red chile add some chunks of pork butt let it simmer till the pork is tender then add a few potatoes till they are tender  Mmmm
