Rack of Lamb

Any suggestions for preparing the rack. Seasoning to use. This will be my first lamb so any helpful hints will be appreciated.

I love lamb rack on the egg. I cook indirect in a cast iron pan at 400 degrees. To prep the lamb j make a paste (use a spice grinder or vitamix or similar) using olive oil, garlic cloves, rosemary, thyme and any other fresh herbs you may have. Rub all over about an hour before you cook (after seasoning with salt and pepper). Cook at 10-15 mins each side, rest for 10 mins under foil and slice individual chops and serve. Enjoy !

I did one a couple weeks ago with Dizzy Pig Red Eye Express that turned out really good. Did a reverse sear.

There was a recipe for a pistachio crusted rack that was very good. Don't know if it will still show

Did one a little while ago. Highly recommend using a 1/2 stone and a spider to set up a 2 zone cooking environment. rosemary, thyme, Greek oregano, lots of garlic, olive oil, kosher salt and cracked pepper. Brought it up to target temp then quickly seared it. Came out perfect.

The FDA says 145 is the safe temp but that gives you a medium well piece of lamb. I pull mine at 122 and with a 10 minute rest it pushes to about 125 to 127. -
I really like this rack of lamb recipe. Dad loves rack of lamb and this is now his favorite. I do it in a skillet and indirect.
