    Nest, heavy duty cover, side boards, side grid holders, daisy wheel, ash tool, CI grid (2), grid lifting tool, ceramic plate setter, carbon steel wok, wok ring, small CI grid for searing, good quality temperature probe (Javelin/Thermapen), IR laser gun for temp readings of grid, wood chips/blocks for smoking, assorted utensils for cooking on CL, SS and Carbon steel, assorted tools for cleaning CI, SS, Carbon Steel...

    Man, there are a lot more you can get, but having said above, if you have an Egg, just start cooking, the accessories are nice but not necessary to get you hooked on your first meal with what you have on hand.

    And having said that, its just plain fun to add something to up the ante when you are cooking, experimenting, testing, contesting or just flat out trying to impress!

    After a couple of L&S, I clearly do need a better meat thermometer.  Thermopen gets lots of love on the forum, but unless I'm totally missing it I will still need to open the lid?  This may be as emotional as the lump choice, but I'm curious about experiences with the Maverick with external and potentially remote readout.  Thanks again for all the insights and input!

    @da87, I have a Maverick 732. It works well, but the range on the receiver is not great. I only use it on my smoker now. For the Egg, I use a Flame Boss 200 controller. It's definitely not a "must have", but it's great on long cooks.

    Yes you will need to open the lid to take a temp with your instant read thermometer.  That isn't a big deal.  On a long and slow cook, you don't need to take any temps for the first few hours. Opening the lid for a short period doesn't have a significant impact on the cook.  Even with a remote thermometer you will still need to open up the lid to test for doneness.  You cannot rely on the remote temp probe as an indicator of proper doneness.

    Yes, you need to open the dome to use the T-pen. But so what? You know about how long things will take and you don't need to open until toward the end. And even if you do, again, so what? I have a maverick. Almost never use it. More trouble than it's worth.

    For lo and slo (mostly pork butt in my case), I don't care about an accurate temp anyway. I start checking at about 195°, but it's far from critical. It's done when the probe meets no resistance, regardless of temp.

    I hate it when I go to the kitchen for food and all I find are ingredients!
