Foil or Butcher paper
have done 4 14-15 old briskets...wrapped in foil after 4 hours of smoke...the have been awesome, but would the be better wrapped in Butcher paper in place of foil?

I like it better in paper. It keeps the bark a bit better.

BTW- bark consistency and how you like it is the big driver for me-if where you want it before you hit the finish-line then go with the paper, if not run nekked til done. Regardless, let the meteorite rest on a cooling rack for about 20-30 mins. before any FTC for a few hours.Louisville; Rolling smoke in the neighbourhood. # 38 for the win.
