Blackened dolphin with mango salsa

Fresh dolphin (mahi) caught in the Keys yesterday by my neighbor + my loaded mango tree = a really tasty dinner for all.  The CI skillet is approx. 70 years old and belonged to my grandmother - after use and cleaning, I dry it thoroughly over fire and lightly coat w/ oil.  Paul Prudhomme's blackening seasoning.  Mango salsa - mango, jalapeño, red pepper, red onion, cilantro and a little key lime juice.  So refreshing on a balmy (hot and humid) tropical night in Miami.

    It's not the Dolphin your thinking of(presumably). It's not Flipper.

    Dolphin and mahi are the same...Dolphin fish NOT porpoise, as in Flipper!!  Folks are always confused by this.  Here's one...

    Don't call it dolphin anymore it's mahi mahi or Dorado. Might be my favorite fish, well done sir.

    That looks exceptional. Thanks for posting - and clarifying. I'm not knowledgable about fish. I grew up in far west Texas where you had to drive 90 miles just to get to a lake.

    That's probably the only cook that I would choose over a good steak.  Outstanding. 

    Where in the Keys was this caught?  How far out?  Off the Texas coast, we have to get pretty far offshore (have to do the 12 hour charter) to get mahi.

    @SciAggie, "fish" are those things that swim around the bottom of the pool at Balmorrhea.

    @foghorn - We don't usually have to go too far off Miami or the Keys for mahi.  Depends on conditions, weed lines and the mood of the fish!  Certainly not a 12 hr. trip unless it takes that long to find them.

    @blind99 - You would not believe how many comments I've rec'd about the nails in this pic...I'm particular about my nails!  LOL
