@DMW, simple my friend. Leftover mashed potatoes, skin on. Hit them with a pinch of S & P. Made it up but will repeat. Formed patties and coated with panko. Little bit of bacon fat in the CI, about 3' per side at raised 400. Crispy creamy. Finished with a little butter and parsley of course.
