I plan on cooking baked potatoes on the Egg at 400 then cranking it up to what temp for a blackened NY Strip in a Cast Iron Skillet?
Butter or Oil?
Thanks!

You should be fine to keep it around that temp. Just open the dome, place on your CI skillet misted with cooking oil. Toss on your steaks when the skillet is preheated. Finish with herb butter. Butter can burn fairly easily so you prolly wanna go with oil initially.

I have had good results with canola."Knowledge is Good" - Emil Faber

I like to sear steaks in a cast iron skillet at ~550 degrees with some butter and a bit of Rosemary and/or Thyme.
