How to cook thin porkchops

 My wife got some porkchops that are about three quarters of an inch thick and wants me to cook them. What's the best bet?

    Shake them in flour dip in egg wash then back in flour and fryin a skillet

    Skillet with butter keep thermapen handy--check frequently pull at 140.

    If no skillet option then go hot and fast-direct, (375*f or so) flipping around every min til at your desired finish-temp.  3/4 " is not as thin as many I have wrestled with, FYI.

    Thin is tough - suggest a reverse sear set-up, stable egg at low as you can go, 225ºF, indirect and choice of smoke and rub. Let the chops come to about 130ºF internal, things will happen a little slower due to the low egg temp. Total time maybe 20 to 30 minutes. 
    You can pull, foil tent on a rack while egg goes nuclear to get a sear, but the best way is to use a hot CI skillet with some clarified butter, maybe 30 seconds a side to add some colour. Finish will be 140º-145ºF range,

    I love them wafer thin .. cover with Dizzy Dust and bake at 375 for seven minutes per side.  Soooooooo good.
