This is at one of the "real" places in Nashville. They use grease from the fryer in order to make a spice paste and that is what the chicken is dipped in. It sounds good but I got a stomach cramp just looking at the pictures.

I agree with your assessment, however my secret ingredient for my chili is one half of a cup of bacon fat I use to saute' my onions. I've tried less and tried more, but one half cup creates the magic.SmokeyPitt said:
