Shrimp and fried grit cake with Tasso cream sauce

Final pic doesn't do this plate justice. Wife grabbed the "staged" plate. Haha.
Top 3 best meals I have made. Shrimp were some I caught myself which makes it even better. Grit cakes made with leftover grits from yesterday Am. They were unreal and pan fried on the mini.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Bravo sir. You killed that. I tried something similar once with grilled grit cakes. They were ok, but as you can imagine they were a little spongy and the texture wasn't great. I am sure frying them they were incredible. I am putting this high on my list of things to make once I reach my goal of not being quite so fat.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.
