Country Fried Cubed Steak and Gravy over Creamy Blue Cheese Grits

I usually fry on the mini, but tonight I gave it a go on the large. The mini needed to be cleaned out of ashes and I didn't feel like doing that. Anyways, as long as you are familiar enough with your egg, smart about it and keep close tabs on the oil with a thermapen (and not overfill your CI), you can fry on the large without a problem.
The grits were made with milk and blue cheese. The gravy was made with a roux, milk, beef broth, and Martini Vermouth. A little more blue cheese to finish. Good stuff.

Thx guys!!! @caliking , I have 12.5 more years in my current profession until retirement. I use the BGE as a decompressing agent. LOL.
