Six Racks of Ribs on the BGE XL

I need to cook six racks of ribs on my BGE XL. Although I can fit everything on the grate, portions hang over the gaps in the Conveggtor and I'm concerned they will get more heat and cook too hot? Do I need to worry? I'm considering doing the ribs vertical in a rack, which keeps them in the center of the grate, but have never tried vertical. Anyone have any suggestions or advice? Thanks!

  • I used to set up ribs vertically in my medium all the time. Though given the size constraints, I would cut them in half first. I would then place them all at the centre of the grate. Worked like a charm.

    Any ribs that are in the path of the rising heat will cook faster than those in the silhouette of the Conveggtor.  You can put some foil under them (on the level where they are cooking, not at the level of the Conveggtor) to block effect.  I've done it a couple of different ways, but the best option is to have two cooking levels.  And regardless of how you do them, to get them all to cook evenly, you will probably have to rotate them around a couple of times.
