Sockeye and SV sweet potatoes

Picked up some Sockeye at the local Kroger. Alder plank with lemon and dill 375 raised direct to 131 IT.
About halfway.
@bgebrent SV sweet potatoes are the bomb. Cube and in the bath at 150 for at least an hour up to overnight. Then in the kitchen clock, or egg, at 350 until they start to brown and IT is 190-200. Season as you please. These had Jallelujah salt. Crunchy outside, really sweet soft inside.

@legume after my insurance biometric report came back bacon blankets are limited appearance for a while. Need more fins, feathers, seeds and stems and less mammal muscle.
@eggingaround that side is a family favorite with a little balsamic drizzled on. -

Thanks to @Dyal_SC for giving this a bump, missed it the first time. Looks great. Fully agree on the Trés Booblay sweet taters, allowed to caramelize a bit after the bath with a sugar based rub they are awesome. (Carrots do this well too) Couple of weeks ago was our first SV corn on the cob, it was very good.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!
