I also would like some more info on the salted and lime juice jalapenos. Never heard of doing this. Looks like you soaked in lime and then once pulled from egg salted? What does it do to the flavor?Large and Small BGECentral, IL

@saluki2007 it's super simple, I just put fresh jalapenos on the grill, usually on the perimeter where they're not going to scorch and let them roast slowly until they give up - they kind of collapse. you have to roll them a few times, check how firm they are and manage the charring so you don't have too much. then pull them, put them in a bowl and squeeze a fresh lime on them and hit them with some kosher salt. you can eat them as they along with your meal, or you can slice them up and put them in whatever. last night, after slicing them, I poured the salty/peppery lime juice they were sitting in over the corn to season it before putting it in the tacos.
