Looks great.
There's no doubt about it being the other white meat. I've read that modern pork is at least 25% leaner than it was 20 years ago.

A friend's family used to be in the pork processing business. Near the end of them owning the company, they were having to buy pork fat from other companies in order to make pork sausage. Not sure how long they had to do that.
