Don't see why not really.  Looking to freeze?

In the table forum?  Mid morning drinking?

You can pre-roll, freeze and pull them to cook as you need.

Be careful of the moisture content.  I pre-made some & drove 1.5 hours to my sister's place.  The wrappers were soggy when I went to cook them.  Total time between making and cooking was three hours or so.
edit:  Of course it was the holidays, I wasn't driving and the drink was plentiful.  I coulda screwed up the filling.

    Lol...

Just like Craig stated, you can pre-roll with no issues.  I would freeze them so the wrapper doesn't saturate much.

I made them for a appetizer party a while back. I made them the night before and pulled them out when needed them.

Freeze them individually so they don't stick together.

Doesn't freezing them screw up the texture of the cabbage, bean sprouts, other?   :|
