You can pre-roll, freeze and pull them to cook as you need.

Be careful of the moisture content. I pre-made some & drove 1.5 hours to my sister's place. The wrappers were soggy when I went to cook them. Total time between making and cooking was three hours or so.
edit: Of course it was the holidays, I wasn't driving and the drink was plentiful. I coulda screwed up the filling.Flint, Michigan -

Just like Craig stated, you can pre-roll with no issues. I would freeze them so the wrapper doesn't saturate much.------------------------------
