@The Cen-Tex Smoker....have yet to cut it open. Feels like it is a solid hunk of cow. "Just like a chuckie"....good deal. Will grab the bigger DO next time I am out in the garage. Thanks...

that's what I would do. I've never heard it called that but I'm sure it's just a chunk of the clod that has been cut down to smaller.
