Strip Loin into NY Strip Steaks

My first go at this and after my initial fears of making that first cut into the SRF, on sale but still a small fortune, beast, I thought it went pretty well. Got 13 steaks and each weighed in at over 16 oz. The entire strip loin was just under $325 so that comes to $25 a steak. Will follow up after my cook on Wed.

Nice!! I just did the same thing. Cut 8 full, and 8 halfs/Manhattan, and a 3lb roast. I had an oddball, so of course had to try it out. You're definitely in for a treat! The flavor was crazy good. Incredible is all I can say. SV for about 2 hours at 128 and then on the grill for a sear. Had to remind myself these were strips. So tender and flavorful. Only used salt and pepper and my boys stated, "all we taste is the meat just like the professionals prepare them".

I'm going to pull the trigger on this again later in year and follow the YouTube with Sean cutting up the strip loin into a roast and some manhattan steaks. Can't stand it....was in a high end grocery store. Just look at their premium choice rib eyes and strips and compare to the SRF strips. Wow!

Just did another 2 @SRFShane strips and 4 Sam's filets. No comparison. Highly recommend pulling the trigger on the SRF strip loin. Maybe split with friends and look for a sale. Well worth it.
