A big nod to @NecessaryIndulgences idea on these.  Got the ribs from my BIL who processed 2 of his black angus.  250 for 2 hours with a couple chunks of white oak (thanks again @DoubleEgger!).  Seasoned with Meat Church Holy Cow.



Then onto a sheet pan with half a beer and some Worchestershire (nod to @lousubcap), wrapped in foil and back onto the egg for 2 more hours.




Then straight back onto the egg for one more hour (probing tender).






SWMBO tricked out some hash browns and roasted asparagus.



It was a beautiful evening on the lake for egging.  This cook reminded me how much I appreciate all the people on this forum that offer good advice and assistance freely.  We ate well.  Thanks for all the help.
