brisket hamburger??

My neighbour came over to ask if I knew about this type of hamburger. Apperently there is some butcher or a grocery store selling hamburger ground from the brisket. He is wondering what this would be like. I have never heard of it. Have any of you? Seems like a waste of a great cut for L&S, but then again, maybe it would have good fat content????

I ground a whole packer from RD with great results. I usually do chuck but thought why not. I trimmed the hard fat first though. It was more lean but good. Not that much different from chuck flavor wise.Parker, Colorado

I've heard of it. I've had it. Didn't notice a difference. But this has been a few years ago. Maybe I forget.

If you can get just a pound or two, buy it and try it. I would not buy a whole packer or even a small flat for that test run.Hood Stars, Wrist Crowns and Obsession Dobs!

I use brisket for lots of things, makes great ground beef for chili.1 Large BGE, 1 Mini BGE, 1 Minimax BGE, Original wife and 3 dogs living in the heart of BBQ country in Round Rock Texas.

Lotsa fat and flavor in brisket. I do a mix of brisket, chuck amd short rib when making a big batch of burgers. Really good stuff. Never did just brisket but ill experiment amd try it out

I've bought many PRIME whole packers from Costco for something like $2.89 PER POUND. The choice flats are right there next to them for 3x the price, can't figure it out. At a high end market I used to butcher at we made a "prime burger" blend. We ground the points of the briskets, caps off the sirloins, and ribeyes. It was roughly a 40/40/20 mixture. The burgers were awesome. What was even better was watching those rich people spend $15/lb on burgers

We aggressively trim our competition brisket. All that becomes cheeseburger. They are awesome. I can get prime cab for 3.99/lb I can't get burger near that. I've ground a whole one. Came out at least 80/20 if not fattier. The price of ground beef these days is astronomical... Like almost $5 per lb in some grocery stores. If you can grab a whole packet brisket for less than that per lb (at Wally World it's less than $3 per lb), it is tastier and s lot cheaper to grind it yourself. Plus you can cook it to a lower internal temp that way.
