Saucing Wings
Looking for feedback re: when to sauce wings; before, during or after (or "all the above!) cooking... I want to maximize the "crispyness"! Any feedback greatly appreciated...

After cooking, I toss back on for 3-5 minutes depending on temperature. It helps set the sauce.Large BGE - McDonald, PA

Other things are a factor though. A dusting of corn starch and some time uncovered in the fridge help too.

I do it during, I do my wings indirect for 60 minutes flip after 20 and sauce, then do the same after 40XLBGE, MMBGE, CyberQ

I typically do it during, but like @redskip only at the end. I find it makes a real difference. Do it too early and the sauce is likely to burn and the skin won't crisp up as much. I always toss with the sauce in a big steel bowl.Toronto ON

Another vote for just before the end-and then back on to set the sauce. Great points above about getting crisp skin, air dry in the fridge (overnight if possible) and use a light dusting of cornstarch before tossing on the BGE.

i did something different this weekend that worked pretty descent. thinned out some franks redhot with soy, water, red vinegar and some cayenne, marinaded over night then sousvide at 145 for 3.5 hours bagged with the marinade. 550 direct til crispy, 195 internal. half i then sauced with franks and butter and back on the grill for a few minutes. they were moist, fall apart, and crispy all in one. you could pick up the franks flavor in the non sauced

Here are mine, as stated above 20 minutes with applewood smoke then flip and add sauce, then flip in 20 and add sauce again and at the 60 minute mark is the result below. One side is S&P and the other hotsauce.
