Clams in Cartoccio; Grilled Zucchini with Ricotta and Mint

Italian night, two Mario Batali recipes. 

The zucchini were sliced razor thin, dipped in a red wine, olive oil, and black olive paste marinade, and quickly grilled. Served with ricotta cheese and olive oil mixture, with fresh mint and paper thin Serrano pepper slices. Drizzled the marinade over the top. Very good. 



The clams were cooked in a Cartoccio: pancetta, garlic, bell pepper, wine and cherry tomatoes. Looked great but slightly underwhelmed.
