Skirt Steak, Broccolini, Rutland...

I've posted a similar cook before, but last time it was with flank, asparagus and I didn't have my new @RRP gasket to show off.
So, I usually don't find skirt in the stores around me, but it seems that lately it has become a stocked item! Used to be, or so the rumor goes, that skirt was taken up by all the restaurants to use for fajitas and such, and that's why we could only get flank. Anyway, saw it, bought it, cooked it....
Rubbed it with chimmichurri and let it sit for a bit in the fridge;
Scrapped off some of the rub, added sugar, pepper, and onto the grill!
And WOULD YA LOOK at that nice new Rutland Gasket! I finally put it on, did the break in firing during the week and was ready to cook today. I don't know why I put it off for so long...this was very easy to install. Hoping for years of happy use out of this guy. So nice to have a soft, tight, seal between my upper and lower assemblies again! Thanks again, Ron! Such a nice service you offer for us to have cheap gaskets and clear instructions.
Skirt after the flip...
Had the broccolini tossed with lime, garlic, EVOO and some S&P. Put that on to cook while I puffed up the tortillas on the grill. (if you don't do this, it completely changes the flavor/texture of the tortillas. highly recommend it.)
Served up with the goods I had on hand. I had actually set aside some chimmichurri in the fridge and forgot to bring it out for meal time... DOH! Still very good.

Flavor was excellent. The well done pieces were the best. Moist, flavorful and tender. The MR cuts were a little tough. Nobody complained though. All good in the hood!

Looks delish!!! Love a nicely marinated and grilled flank steak. I just ordered a new Rutland gasket from@"RRP aka Ron Pratt, Dunlap, IL" I plan on installing next weekend. Can't wait to fire up the egg again.

Looks great man, nice sear with the CI!!! Reminds me of the breakfast burrito I whipped up today...

Only advice I can give, leave the chimichurri on, no need to scrape those flavors off my friend. Doesn't look like you were too hot to be a concern from the sear pic.BrandonQuad Cities

Thanks @Focker, I did leave most of it on. AND, you just predicted my breakfast tomorrow. Going to heat this leftover skirt up in the pan and let 'er rip!
I usually let the chimmichurri sit on it for 30 minutes. Probably was only on 15 minutes today. Maybe that was part of the toughness...the combo of lime, garlic, oil, salt and such seems to do some magic on a cut when I let it sit the full time.
