Ribs on. Medium green egg

i need to smoke 3 racks of baby back ribs and I'd like to use my medium egg, can I do two stacks of three half ribs and still fin

Yeah. It'll be crowded, the air flow might not be the best. Plan to turn and re-position the halfs a couple of times for an even result.

Use a rib rack. They take up less space that way.

Cooking on the coast -
On my Med, I cut them into half racks and place them standing vertically in a rib rack two-by-two in each rib slot (sometimes with the top tips of each twosome leaning on one another for stability). Can easily do a lot this way without restricting airflow or having the ribs touch the inside of the ceramic. I did four racks several weeks ago without breaking a sweat.

That method is my next 'go-to' for ribs and other such kind of stuff.Thanks.

The fun thing about the smaller Eggs is that it can be a kind of a puzzle. Maximize meat while minimizing lump - a novel challenge.

...Just thought I'd add that one of the primary advantages of placing the ribs vertically like this is that it allows you to keep the entirety of the ribs above/in the shadow of the plate setter, thereby preventing direct heat and any resulting burns.
