Eggs, but not egged, double pig frittata
Legume
Posts: 15,938
Decided to post a non-egged cook since it has ham and bacon that originated on the egg and because I used a cast iron pan and, well, people here love those. And because I like posting recipes and helping people and I need to pump my post count.
First time frittata. I did my usual read a bunch of recipes, then do a mash up without measuring much. It worked out this time, doesn't often though.
Easter jerk ham, caramelized sweet potatoes, onions and red pepper, fresh rosemary and lemon thyme, shredded Parmesan and Manchego mixed in and on top with some crumbled bacon.

Looks awesome man. It rose quite a bit- did you add milk or cream that made it rise?Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

thanks.
@SmokeyPitt yes, I did add a big glurg (maybe 1/4-1/3 cup) of milk and a couple of handfuls of the cheese to the eggs, I used about a dozen eggs. I was surprised how much it rose, but thankfully it didn't fall much.
One other thing, I put in a healthy shake of John Henry Sugar Maple rub, maybe a little strange for eggs, but it worked really well with the ham and sweet potato.THANK YOU FOR YOUR ATTENTION TO THIS MATTER -
