Another great way is Snapper on the Half Shell.
Filet each side but keep the scales. Cook raised direct.

Friend took me to restaurant in Houston several years ago and it was their signature dish. Easy way to cook and as it curls little it holds all the butter, juices and seasoning.

Been away so sorry to be late in replying. Fish was cleaned, scaled and stuffed with the basil, garlic, lemon and thyme. Cooked raised indirect at 400 for about 30 minutes for this size fish. The broccoli goes on late in the cook as it only needs 10 minutes and I like to rest the fish about 5 minutes. Thanks @EagleFan and @rjac!rjac said:Looks great! How long and what temperature?
