I have a pie tin I use as a drip pan, cover it in foil for easy cleaning. Here's a butt I cooked on that trip:

I bring four things on the road:
Egg (mini or small or both if the group is big enough) - I use construction shims to keep the inside parts stable for transport.
Cooler with meat/food and beverages
Cooking tote (make sure to have a pair of welding gloves in there - it sucks to forget those when you're in a parking lot)
Galvanized bucket with lid
My travel tote that has everything except seasonings kept in it permanently. I bring the seasonings I'm going to use for the planned cooks. Most of my tailgating utensils are el'cheapo versions of what I use at home since they don't get used that much. I do keep a Thermapen in there all the time though since I can't seem to cook without one anymore.
In my bucket, I put the lump in a garbage bag and a gallon jug filled with water. At the end of the cooks, I put the burning lump in the bucket and dump in the water to quench the coals. There's not always a place to get rid of hot coals but once they're quenched, it's no problem. Also, I always end up cooking for more people at a tailgate than my own group so I bring plenty of lump.
