Smoked Spam

So another topic inspired me to try smoking spam, and I even found a recipe online.
Of course, never one to follow a recipe to a tee, I made it my own.

Here's the can


Here it is with a wet mustard rub on it, sat for 2 days in the fridge with rub.


Just done and ready to come off the BGE

while eating I remembered to take the "Fork shot"



My son & I liked it, wife thought it was too salty.
Large BGE in a Sole' Gourmet Table
Using the Black Cast Iron grill, Plate Setter,
 and a BBQ Guru temp controller.

Medium BGE in custom modified off-road nest.
Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

Location: somewhere West of the Mason-Dixon Line

    I think part of the fun is trying something different. Personally, I like Spam and will give this a try. I have been using reduced sodium Spam fried up for breakfast with some scrambled eggs for a very low carb breakfast.

    Interesting angle here. I gave up trying to go rogue on traditional recipes. There are some hard asses here who slagged on me when I tried to make recipes with a different twist and tried to "make it my own" 
    Good on ya for not being afraid of the masses. 
    Im too scared to get ripped apart to experiment anymore.
