Looks great. Wonderful Birthday meal.
Stupid question - looking at your time/temp, was it only a 5 1/2 hour cook with only a bit over an hour to get to 163 and foil? How big were they and what temp?
I'm not bad, I'm just drawn that way.

I have never had a brisket stall, but had it plenty of times with a pork butt. It was tender and delicious.
