Let's just get to the pictures....










Finally nailed reverse sear- 200 degrees indirect until 115 IT. Seared in cast iron skillet for 2-3 min per side. Pan sauce with shallots, brandy, stock and cream. Had to burn a gift certificate at the fish market - Maine lobsters were - $17/lb.  Parboiled for 5 min then cooled in ice bath. Cut in half and basted with parsley butter and cooked in shell for 15 min.
