Brioche

I'll start by saying I wasn't gonna post this but, a friend suggested it so here it is. So my wife @HuskerMaMa had requested I make some Brioche. Here's a link to the recipe I used. It's not terribly difficult but, the process is important (don't try shortcuts). This is the best brioche I've made to date.

I didn't take a bunch of pics (odd for me I know).
Dough before the first rise.
After the first rise before deflating and putting in the frig for the second rise.
After Zas last night I decided to go ahead and make the bread. Used the same Za set-up. And just dropped the temp down to 375℉ish and rotated the pans a few times to get a more even golden crust.
My wife made us some Brioche French Toast today w/ market fresh fruit and some over medium eggs and crisp bacon.

That looks really good. I sure do wish we weren't trying to limit carbs now. It's a bummer to have to pick and choose. Let's see brioche or pizza.

Beautiful plate, Blake. I only use brioche (store-bought, I admit) for French toast. Superior to any other bread for that dish.Judy in San Diego

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
