Just a hodgepodge of stuff, no recipe other than the sauce from Sky's Edge
The line-up
Strip steak marinated in soy,rice wine,ginger,garlic sesame oil and cornstarch. The veggies are red pepper and green onion that are hiding under the broccoli and mushrooms. Sauce is Chicken Stock,oyster sauce & soy. The small cup has ginger,garlic and chili bean paste that the meat will be cooked in.

And the edible end product. No egg pics because you all know what that looks like.

Lol. I had to work too. That is what is cool about stir fry, I might have had 35mins involved from starting the egg to eating.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

I didn't see your set up on the egg, and can't comment on how hot your fire was or the positioning of your vents, so I'll just have to give you the benefit of the doubt.Mattman3969 said:Lol. Thank you @sciaggie. My trip to the Asian market is definitely reaping benefits with my stir frys. Mrs3969 asked me what was making the wok cooks taste more authentic. That looks excellent, when you get a chance I'm interested in how long you normally marinate. Just starting Sky's Edge after finishing Breadth, Thanks for posting.

Maybe 15-20 mins max. Tonight I prepared the meat with the marinade ingredients, fired the egg, prep veggies and then cook. The dome never closed from fire- up till I shut it down when I was done cooking. Generally I will stabilize at 500° or so but I was rushed tonight so I let it roll. I took your lead and went into my Sky's Edge (haven't read yet), went to the meat section, used the "Stir Fried Ginger Beef" on page 71 for a base, used a tsp for approx. measure. I sliced about 12oz of Costco Prime Sirloin, fine grated a little ginger, light soy, rice wine, cornstarch salt, pepper, no scallions, no pickled ginger, skipped the oyster sauce, about 2 drops of sesame oil, peanut oil, and a little dark brown sugar for the sauce marinade. A handful of sliced mushrooms, a handful of snipped green beans, a little green pepper I hand in the fridge. Threw everything but the meat and marinade into some oil and butter in smoking wok, removed, added a little more butter & oil, dumped in the meat, one layer, flipped around, returned veggies, a little soy and served on rice with some sesame seeds. Kinda of grabbed and tossed together on your lead, came out very tasty. Now that I wrote it down, I'll do a repeat. Thanks Again for your post!
