Smothered Chicken - Bam! (Pic Heavy)

I love my eggs. Rockin' the large and the MM. SWMBO loved this meal and so did I.

I took a bunch of pics because it's fun to share cooks. This recipe rocks so please try it.

Started the chicken in a CI skillet @ 350 degrees. Seasoned with some DP Ragin' River. 

Got the spinach going over medium heat with garlic, butter, and EVOO.

Added the cream cheese and Parmesan cheese. Kept it warm over a couple of briquettes in my little charcoal stove.
Threw the little deBuyer carbon skillet on with some butter getting ready for mushrooms.


Now it's time to put things together.



Life is gettin' reaaaaaal good about now.

Made some individual potatoes.

Used the thermapen to know it was 165 degrees IT.

    The wife and I are trying to find a balance between eating well and trimming calories. It was really difficult to eat 1/2 of a chicken breast.
