Grabbed this from my "Smoke & Spice" book, and it was a hit.
Rubbed over and under skin (ripped a little bit) with an herb paste (mix of cilantro, mint, parsley). Cooked whole at 275, breast up, for a little over 2 hours. Skin wasn't crispy, but I wasn't anticipating or aiming for that anyway. Served with black beans, an awesome mango-avocado-tomato salsa, and cilantro-lime rice. Sauce for dipping was mixture of orange juice, lime juice, orange zest, olive oil, cumin, oregano, minced garlic, and cilantro. Definitely in the rotation.
