It's What's For Dinner, Brisket!

I just finished smoking a 14.5# brisket for a dinner party tonight.  Made the point into burnt ends.  From what I sampled it tastes pretty good.  Hope I have enough left over for making chili for a contest on Thursday.  It was the biggest one I could find at Sam's last night.

I used cheap Igloo cooler.  Filled it half full with water, closed the kid and let sit for 20 minutes.  I then put towels in dryer for 20 minutes on high heat. I wrapped the flat in plastic wrap then double wrapped in HD foil and did the same for burnt ends in a foil pan.  Both the burnt ends and flat were still hot after 3.5 hours.  The leftovers were still warm seven hours later when I went to put the flat in the fridge that been sitting in the cooler the whole time.  A Cambro would be nice, but a cheap cooler works in a pinch.

Very nice!  It's been a long time since I've done burnt ends.  I usually do slices of point/flat, or shred it later for nachos, etc.  This makes me want to do them again though.
