Yakisoba Chicken and Noodle Stir Fry (pics)

Inspired by @Mattman3969 and his wok cooks I had to break the wok out. My new favorite wok cook. First time trying soba noodles and yakisoba sauce on a recommendation from a close friend.
First up, boil the soba noodles as directed:

Rinse under cold water and set aside (in fridge):

Also got a new infrared thermometer..get the wok hot!

Mise en place:

Garlic, sesame oil, peppers and onions up first:
Chicken up next with lite soy sauce:

Veggies added back in with a tad more lite soy sauce:

Soba noddles in with yakisoba sauce added:

And plated with sunflower kernels - thanks for lookin'!

Thank you!! Something I noticed in Sky's Edge is Grace uses ketchup in several of her sauces. I never had before but it seriously works well with soy, rice wine and cornstarch. Looks like the only I have missed is the oyster sauce.-----------------------------------------analyze adapt overcome2008 -Large BGE. 2013- Small BGE and 2015 - Mini. Henderson, Ky.

That is a great cook! Is the yakisoba similar to a dark soy, teriyaki, oyster sauce? I've never seen it before.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

Thanks! I'd say it's somewhat similar to teriyaki sauce. I found this bottle at Buford Farmers Market, but I'd imagine any Asian grocery store would carry it. I also posted a recipe for it above.
