Pork loin chops w/mustard sauce

Costco had a great deal on pork loin, so I snagged one up the other day. Most will go to the freezer and cook some for dinner.
Here's the details and photos:
1 - Seasoned with salt, pepper, lemon zest, and thyme

2 - Went raised direct at around 425° until 145° internal.

3 - Sides were rice pilaf and cucumber salad. Mustard and apple sauce accompanying the pork.

The following was used and have no idea the amounts: apple juice, whole grain mustard, chicken stock, salt, pepper, fresh orange juice, rice wine vinegar, butter, honey, water. I didn't know exactly what I was wanting, but, in the end it came together.

I clicked on this topic very much interested in the mustard sauce. And not that your sauce sounds bad, but i was hoping for something different. I had some short ribs at a restaurant with a mustard whiskey sauce. They were delicious, and I have been on the quest to find a recipe that at least comes close. I've tried, and while I've made a sauce that isn't bad, I still haven't hit upon what i remember.

Using the Black Cast Iron grill, Plate Setter,
and a BBQ Guru temp controller.
Medium BGE in custom modified off-road nest.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
